This weekend, Mark and I drove up to wine country in Paso Robles, CA, just about five hours north of where we live in Irvine. My cousin Cody got married and it was a beautiful ceremony/reception. The ceremony was at a local Catholic Church in Santa Maria (I remember going there as a little girl with my cousins) and the reception was at his family’s winery, Red Soles. How to eat Keto at a wedding? (and look this happy doing it)

We knew ahead of time that Paella, that yummy Spanish dish with lots of rice, seafood, and other protein, would be served during the reception. So, after the wedding ceremony at the church, we took the two hour break to change into more comfy clothes, and stopped to get the #13 Original Italian Sub-in-a-Tub at Jersey Mikes! Lots of yummy, fatty deli meat, cheese, mike’s way with banana peppers and oregano seasoning, tomato, lettuce, onion. I added bacon and avocado to mine. (TIP: ask for a GIANT sub, in one tub.) Mark ordered the Cheesesteak, a hot sub, in a tub. His was topped with lettuce so it wouldn’t get soggy and he added jalapeños. YUM! How to eat Keto on a Roadtrip?
Mark and I packed chicken and turkey lunch meat, mozzarella cheese sticks, Powerade (sugar, calorie, and carb free of course), water, and coffee in a small collapsable, soft cooler we found. These were our snacks for the road. And the coffee helped us save some money from going to Starbucks every morning. I made a pot of coffee and put it into a Growler we had from a brewery, left the lid off over night, and it cooled down. We also put heavy cream into a little Tupperware container to get that Keto-jolt.

How to eat Keto at the Hampton Inn?
Free breakfast or complimentary breakfast included with your hotel room is like the ultimate best. Only if the food is edible, of course. This weekend, we scored on both accounts. Yummy breakfast at the Hampton Inn, Paso Robles, CA. Yes, the sweet smell of waffles and pastries was teasing our senses as we walked from our hotel room to the downstairs breakfast area. BUT, one of the most satisfying parts of eating keto is saying “NO”. Our Keto breakfast was perfect – scrambled eggs with ham and cheese, two sausage patties, and some delicious salsa packets. We also had some iced coffee and heavy cream at the room from the growler we brought. Surprisingly, we were full until an hour before the reception.
