It’s Friday. The cravings are kicking in yet again. And today’s is none other than the good ‘ol, greasy Mexican food. YUM! But it’s filled with lard, butter, sour creams, guacamole, cheese… and? Thankfully, this is the perfect mix of ingredients for ketosis. The hardest part – no tortillas, no chips, no beans.
Today I discovered the Grande Taco Salad from Avila’s El Ranchito. Fresh, leafy greens topped with fluffy pieces of orange and white cheese, sour cream, guac, carnitas, pico de gallo, and grilled zucchini and mushrooms.
The most fun part about eating this dish was resisting the urge to eat that fried taco shell. I don’t know about you, but when I was younger, that was the part I always went to first. How did I resist today? I intermittent fasted for about 20 hours, was super hungry, and enjoyed everything in that taco shell. Somehow I was able to convince myself that the shell was really a bowl and I wasn’t able to eat it.
Mark played it safe and got the carnitas plate with guac and a side house salad.
